BOSCO, a name inspired by the Italian word for forest, is Hacienda El Bosque’s restaurant and bar. Its concept is based on products from the Hacienda and the surrounding region, incorporated into Colombian and international dishes. The cuisine highlights ingredients from the high-Andean countryside and complements the experience of guests and day visitors. It is signature cuisine built around local ingredients and products grown and produced at the Hacienda.

Potatoes grown on the farm are used in ajiaco; vegetables from the Hacienda are served in salads; and trout raised at the Hacienda is featured in BOSCO Fish & Chips and garlic trout.
